The Big Apple is the epicenter of American restaurants. It’s the city where so much talent has gathered as this country’s food and restaurant culture transformed over the past few decades.
Gavin Kaysen was one of those chefs who ventured to Gotham to cut his teeth, becoming a protégé of Daniel Boulud. But instead of staying in N.Y.C., he went back home to Minneapolis in 2014 and showed his compatriots they could build chef-driven restaurants outside of the country’s traditional culinary hubs.
Located in a former horse stable, Kaysen and crew serve a Midwest-inspired menu with dishes such as venison terrine, pot roast with pommes aligot, and cappelletti with pumpkin.
